JAMROCK Jerk Chicken - try it at home!

Whether you’re new to the Jamaican and Caribbean cuisine scene, or you’re already very familiar with it, this flavour-packed, Traditional Jamaican Jerk Chicken recipe is exactly what you’ve been looking for!

Whilst we know you won’t get the same brilliant service, sense of community, exciting events and your favourite island tunes as our Leeds City Centre restaurant, we welcome you to cook our tastiest, most flavoursome traditional Jamaican recipes for you and your family at home!

This recipe serves 4-6 people.

Ingredients:

  • 1 whole chicken (use your favourite cuts, e.g. thigh, breast, wings)

  • JAMROCK’s Jerk Marinade

  • 1 tbsp garlic powder

  • 1 tbsp onion granules

  • 3 fresh garlic cloves

  • 3 Scotch Bonnet peppers (deseed if you want less heat)

  • 1 bunch roughly chopped spring onions

  • 2 tbsp soy sauce

  • 1 tbsp grated fresh ginger

  • 1 small chopped onion

  • 2 tbsp brown sugar

  • Salt & pepper to taste

  • 1 tsp cinnamon

  • 1 tsp nutmeg

  • 1 tsp allspice

  • Juice from half a lime

  • 1 tsp fresh thyme

  • 2 tbsp olive oil

  • 4 scallions (ends trimmed)

How to cook:

  1. Add all marinade ingredients to a blender. Blend until smooth.

  2. Prepare your chicken and cut up into pieces.

  3. Use a knife to poke small holes into your chicken to allow the marinade to permeate fully.

  4. In a sealed food bag or bowl, pour your marinade over your chicken and rub.

  5. Cover and refrigerate for at least 2 hours. Best left overnight to marinate.

  6. Time to grill! Heat a charcoal or gas grill to medium-high heat and lightly oil the grill grates.

  7. Grill your chicken for 12-20 minutes, or until it is cooked through.

  8. You can also bake your chicken in the oven if you don’t have a grill, however for best results, a grill is the preferred, traditional method! If baking, preheat your oven to 200 degrees Celsius and cook for 35-40 minutes.

  9. Brush over an extra, generous layer of jerk sauce, then remove from the heat and serve.

How to serve:

Here at JAMROCK, like on our menu, we think our delicious Traditional Jerk Chicken and Boneless Jerk Chicken are best served with Rice n’ Peas (seasoned rice and kidney beans), Crunchy Salad, and extra sauce on the side. For an even more mouth-watering plate - add Fried Plantain and Dumplings to dip!
